Parmesan crusted chicken


I love cheese, Parmesan the most. I love chicken, grilled the most. The nutty taste and gritty texture of parm, makes it a perfect choice to add texture to my grilled chicken. This chicken is easy to make, and uses very few ingredients. Here's the list
  • 2 boneless chicken breasts
  • 1 tsp garlic powder
  • 1 to 2 tsp chilly powder
  • 2 tsp Italian seasoning
  • Store brought bread crumbs or  better, home made (just crush 1 wheat toast in the mixer)
  • 1 egg
  • 2 tbsp all purpose flour (maida)
  • olive oil
  • grated parm (be as generous as you want)

Recipe:
  • Slice the chicken breasts butterfly style (starting with the thicker end, cut through the chicken breast paralled to the cutting board).

      This gives a thin chicken slice which works well for this recipe. A thick, fat chicken breast takes          longer to cook and feels tasteless.
  • Spread the pieces in a bowl and add olive oil, salt, red chilly powder, garlic powder and italian seasoning. Rub gently making sure all sides are coated evenly. Keep in refrigerator for an hour or so.
  • Take 3 flat bowls. In the first take the flour. In the second take 1 egg, beaten (with salt). In the third take a mixture of the bread crumbs and parm.
  • Heat a skillet with olive oil. Dip the chicken fillet one by one in each of these coatings and place on skillet. Grill till brown on one side. Then flip and cook on other side.


  • That's it. Serve with some more parm (optional). Eat as is, for a chicken only dish or team it with some red pasta.

Cheesy garlicy pull apart bread rolls

There is something magical about the combination of garlic and cheese that makes these rolls irresistible. If you have made bread before, these rolls will take your bread making experience to the next level. Hummus

Hummus is a Levantine (eastern Mediterranean) dip that's made from chickpeas. After some not so successful attempts, I had almost given up on making it at home (something was always more or less or wrong). But recently while hogging on some awesome food at the Dubai Food Festival (#eattheworlddxb), I had a chance to attend a show by celebrity chef Suzzane Hussaini. With her hummus recipe and tips, I embarked on the journey to make the perfect Hummus again. And voila! You can get a hummus recipe anywhere online. But I am posting one here for reference. The Tips at the end of this post are what make all the difference.
