Cheesy garlicy pull apart bread rolls

There is something magical about the combination of garlic and cheese that makes these rolls irresistible. If you have made bread before, these rolls will take your bread making experience to the next level. Even if you haven't, tell me the cheese and garlic in the photo below don't make you want to start! :) Believe me, there is nothing more therapeutic than baking your own bread!



Here's what you will need.
Ingredients:
2 cups all purpose flour (maida)
2 cups wheat flour
1 and 3/4th cup water.
3 tsp active dry yeast
2 and 1/2 tbsp sugar
2 tsp salt
2 and 1/2 tbsp olive oil

For the filling -
1/2 cup butter (room temperature)
4-6 cloves of garlic, minced.
coriander chopped
1/4th cup shredded mozzarella cheese.
Italian seasoning

Recipe:
1. Warm the water. If you have not made bread before you need to know that it is extremely important that the water be warm - neither hot, nor cold.
2. Add the sugar and mix well.
3. Add the yeast to the water and let it proof (Mixture should become frothy. If it does not, do not proceed. It means the yeast is stale and the dough will not rise.)
4. Mix the flours and salt. Add the yeast-water mixture.
5. Add the olive oil
6. Knead the dough. I prefer putting it on the kitchen platform and kneading it for a good 8-10 minutes. The dough should be soft and poke-able( if you poke in the dough the dough should fill back)/
7. Grease a bowl and place the dough in it. Cover with cling wrap and place it in a warm place for approximately an hour or till the dough doubles. Note that the dough can take anywhere from 45 minutes to 1 and half hour based on how warm the place is. So it is always wise to check for the dough to be double. That is the best sign that the dough is ready.
9. Prepare the filling by mixing all the ingredients mentioned 'for Filling'.
10. Knead the dough again for 3-4 minutes. Divide the dough into 4 equal balls. Spread each ball as a rectangle. Roll along the longer side. Then cut into 5 parts. This will give you 20 rolls.

11. Grease the baking tray and  place each portion on the tray with the cut portion down. Place them close to each other, yet keeping some space in between for them to rise. Cover with cling wrap and let it rise again for 30-45 minutes.

12. Preheat oven to 200 deg C.
13. Remove the cling wrap. (Thought I should remind you of this, as the lady typing here had forgotten it once!)
14. Place the trays in the oven and bake for approximately 1/2 hour or till the top is golden brown in color.

15. After removing from oven, brush with some butter (optional)

Enjoy as a snack with tea, or with a salad for dinner.

Home made butter/makkhan/loni

If there's one thing that goes best with a paratha  or thalipeeth it would be the white homemade butter. Of course when you live outside India, it becomes impossible to get it or make it (since we normally don't boil the milk or separate the cream and save it to make butter).  But there's a way.  And it's pretty straight forward. All you need is a hand mixer and plenty of strength in your arms (as it can take a while). Ingredients: As far as ingredients go, you need just one and that's Whipping cream. I bought a 1 L whipping cream tetra pack. Recipe: As far the recipe goes, again there's just one thing to do. churn, churn and churn. It may be easier if you have a standing automatic churner.
