Palak-Paneer sandwiches.. [Food court, City Pride, Kothrud].

If you are like most other Indians, you like Spinach and Paneer (Cottage Cheese). And if your kid is like most other kids, he or she’ll probably savor the paneer but throw tantrums around the spinach. Trust sandwiches to ensure everything goes in the tummy! Palak-paneer sandwiches on the menu chart of a food court in City Pride, Kothrud seemed promising. And they did not disappoint. They seemed easy to make and victory followed in just one attempt. So here goes...  

Ingredients:
  1. 1 bunch of spinach - chopped
  2. 1 small onion - chopped
  3. 1 cup paneer – crumbled. Homemade is best.
  4. 10 cloves of garlic – chopped fine.
  5. 1 tbsp olive oil.
  6. 1 tsp black pepper powder.
  7. Salt to taste.
  8.  ½ cup shredded cheese.
  9.  Bread slices or bread rolls (better)
Recipe:
  1. Heat oil in a pan (Non-stick is better so that paneer does not stick)
  2. Add garlic and sauté.
  3. Add chopped spinach and sauté till all the water dries off.
  4. Add paneer, pepper powder and salt. Sauté for few more minutes.
  5. Remove from stove.
  6. Take  a bread slice and spread the palak-paneer mixture on it.
  7. Spread some cheese. Place the second slice on it. 
  8. Grill in a sandwich maker or in a Panini machine if you are using bread rolls.
  9. Serve with tomato ketchup.

Home made butter/makkhan/loni

If there's one thing that goes best with a paratha  or thalipeeth it would be the white homemade butter. Of course when you live outside India, it becomes impossible to get it or make it (since we normally don't boil the milk or separate the cream and save it to make butter).  But there's a way.  And it's pretty straight forward. All you need is a hand mixer and plenty of strength in your arms (as it can take a while). Ingredients: As far as ingredients go, you need just one and that's Whipping cream.
